Ingredients of CoXinhA

  10. It's 3 cups of Water.
  11. You need 2 cup of Chicken broth.
  12. It's 1 cup of Plainflour (maida).
  13. Prepare 1 bowl of (mixture of chadder, mozzarella and cottage cheese) Cheese.
  14. You need of Breadcrumbs = as required.
  15. Prepare of Oil = for frying.

Coxinha (pron: co-SHEEN-ya) is a Brazilian street food, minced chicken wrapped in a soft dough, breaded and deep fried. Is there any part of that that doesn't sound completely great? The legend of how coxinha came to be is that a long time ago, there was a young Brazilian prince and, like every prince, he expected to be stuffed to the gills with his favorite. Coxinha is a savory dough filled with a chicken and cream cheese (or crema) filling, and lightly fried.

CoXinhA step by step

  1. In deep pan add 3 cups of water then chicken, onion, garlic and salt..
  2. Cook it for 25 mins. Separate the chicken breast and the broth..
  3. Cool it and shred the chicken breast and reserve..
  4. Drain the broth and reserve. Also reserve the boiled onion and garlic..
  5. Make patse of boiled Onion and garlic then we will use it in filling.
  6. For the Filling..!! In a medium pot, add oil and garlic onion paste until truns to brown..
  7. Add boiled shred Chicken in the pot also add red chilli powder, vinegar, soya sauce and cook it for 5 mins..
  8. After that 1 small bowl of 3 types cheese (mixture of chadder, mozzarella and cottage cheese). Then trun off the flame..
  9. For Coxihna dough..!! In deep pan heat reserve broth that we already made in step 1..
  10. When Borth start boiling add plainflour and mix continously..
  11. Mix it until it form a big ball. Transfer to a bowl and leave it to cool..
  12. For Coxihna shape. ! To form a small coxihna we are going to get a little piece of the dough and form a ball the size of a ping pong ball..
  13. Then, flatten the ball, creating a disc and then hollowing out the middle for the filling..
  14. Place a tablespoon of the filling in the middle of disc..
  15. Then press the dough closed around the filling, shaping it as a teardrop..
  16. Repeat the same process and make remaining coxihna..
  17. Dip coxihna in beaten egg. Roll it in breadcrumbs Deep fry it until truns to brown..

They're actually quite easy to make, but are a little bit of a labor of love because of the different steps involved. My absolute favorite coxinha was one I would get almost everyday after 'work', from a bakery up the street.
