They're easy to make, perfect for make ahead and freezing, economical, and they look as great as they taste!! So don't pay a fortune for bland frozen mini quiche…make them at home! Mini quiches instructions
- Preheat oven 160°c.
- Add eggs and milk into mixing bowl and mix well.
- Finely chop all vegetables and preferred meat and add to egg mix.
- Add herbs, lemon juice and cheese and mix well..
- Spray muffin tray and pour egg mix into muffin tray evenly.
- Turn oven up to 200°c.
- Put muffin tray into oven for 30-40 minutes, making sure to keep checking as minutes go by.
- When cooked all the way through take out of muffin tray and let rest for 10 minutes before serving and enjoy!.
I used a biscuit cutter to trim the bread into circles. I sprayed the bottom of the muffin tins with a little Pam and them placed the bread inside. I added an extra egg to the mixture, some chopped Canadian bacon. If greased well, the mini quiches pop right out using a spoon to scoop them up. Serve warm or at room temperature; Mini quiches make great leftovers!
